	Orin Swift  Papillon  2005 Red Wine  Napa Valley  $55  This Cabernet based blend is full-flavored, well-structured and opens beautifully within minutes of being in the glass.    This offers a nice bouquet of blue & black fruit, flowers, and spice box.  On the palate this is lush with generous blackberry-plum fruit, blueberry compote, along with notes of vanilla, roasted coffee bean, smoke and spice.  The finish is long and focused.    Papillon is a blend of 63% Cabernet Sauvignon, 19% Merlot, 9% Cabernet Franc, 7% Malbec, 2% Petite Verdot made by the talented Dave Phinney, known best for his Mercury Head Cabernet (sold out) and The Prisoner Zinfandel blend ($31.99; 2006 is delicious and available).   This “tat” (tattoo) spells out PAPILLON from the hands of Vince Tofanelli.    I saw Dave last month when I was up in Napa hanging out with some of my valley friends.  Dave was showing off this new project.     This interesting new label offers one compelling, solid red wine that is sure to be a conversation piece at your table.
